First, yes, I love just about any pumpkin-related dessert (pumpkin pie is the exception). Second, this recipe looks way too easy. Third, if you make these before I do, let me know how they turn out (I plan on making them sometime in the next three to eight weeks). I’m thinking I could even make these and the cream cheese filling from the whoopie pies and really cut down on some mixing time.
Pumpkin Spice Cookies
1 (18.25 ounce) package spice cake mix
1 (15 ounce) can solid pack pumpkin
1/4 to 1/2 tsp pumpkin pie spice (optional)
Preheat oven to 350 degress F. Grease cookie sheets.
In a large bowl, stir together the cake mix and pumpkin (and pumpkin pie spice if including) untill well blended. Drop by rounded spoonfuls onto your cookie sheet.
Bake for 8 to 10 minutes in your preheated oven. Remove and enjoy! (As with anything that comes out of a HOT oven, I recommend waiting a couple of minutes before enjoying.)
* Mix in chocolate chips
* Frost with cream cheese frosting
